In Taras and Amber Ochota’s own words as emblazoned on their striking label ‘so… we removed the head of a seasoned vosges forest barrique and filled it with whole bunches of grenache from vines planted in 1947… popped the head back on… rolled it into the back of the cellar and on the morning of international grenache day (186 days later) rolled it back out… removed the head and basket pressed it off skins and stalks… after gravity racking off lees only 80 litres was shaped… which divided by 750mls is 106.66 bottles… but somehow when we finished bottling only 99 bottles remained’.
