This year’s Yattarna chardonnay is made from grapes grown in Tasmania and Adelaide Hills, though interestingly it’s 87 percent Tasmania. I don’t have oak input statistics to hand but the 2007 was only 35 percent new oak, which is a far cry from the early Yattarna releases, which were aged in 100 percent new oak. (Update on the oak used here: “Matured for nine months in French oak barriques, 49% of which were new.”)
