COS wine tasting May 2013

Sorry folks, been a while between drinks since a COS tasting I attended, and figured better late than never on this wrap of some of their excellent wines from Sicily.

Founded in 1980 by Giambattista (Titta) Cilia, Giusto Occhipinti and Cirino (Rino) Strange, the three friends decided that they wanted to recreate the work of their ancestors with wine. COS was born. COS is an acronym  of Cilia-Occhipinti-Strange, by the by. The team first looked out for chalk soils and slopes, ‘we are in the south part of Sicily, limestone layered over different kinds of limestone, 250m above sea level. Certified organic, work on our concepts of ‘natural wine’, and we also work following the principles of biodynamics too with meteorology rather than astrology as our mantra. Maturation of the grapes is most important. Full berry that needs to be measured, by watching berry, skin and flavour. There are no additions in the winery at all. We are using a lot of amphorae and concrete for vessels’, offers Occhipinti.

Occhipinti talks in strong tones about generalisations about Sicily, ‘people think of Sicily as an island, but it’s not, it’s a continent, there are grapes on the beach, like chardonnay, harvest is last day of july, nerello mascalese, on Etna and the high slopes, harvest is november. In one hour in car you see three months difference in harvest; the microclimates are different, geology is different, altitudes are different, and subject to different cultures, arabic, greek, italian, roman, we are a mixture of these cultures’. Phew!
