Chalmers vineyard here. “When I started, I wrote a business plan which said, ‘Do a range that has Mediterranean, alternative grape varieties’, so this was always part of the make up. Varieties that love the heat, in dry climates, of which Australia has a lot”. It is picked and pressed in situ then brought back to Coonawarra for the next phase of winemaking.
